Description
In this episode from the “Our Food Heritage” series of “A Taste of Louisiana” from March 24, 2007, Chef John Folse focuses on the German influence on Louisiana cuisine. First, he recounts the history of the German Coast located in the River Parishes near New Orleans, along with German historian Glenn Falgout. In the kitchen, Chef Folse prepares Farre Dressing and talks with Falgout, Don Caskey of the German American Cultural Center in Gretna, and State Representative Joseph Toomy. Next, he celebrates a traditional boucherie with his brothers and friends. Back in the studio kitchen, Chef Folse cooks his Duo of Sausages Smothered in Apples and continues talking with his guests. Throughout the show, Bob Cheney entertains the audience with live music.
