In this episode from the “Our Food Heritage” series of “A Taste of Louisiana” from February 24, 2007, Chef John Folse focuses on the German influence on Louisiana cuisine. First, he recounts the history of German immigration to Louisiana in the 1700s along with German historian Glenn Falgout. In the kitchen, Chef Folse prepares Shrimp and Potato Stew and continues talking with Falgout. Next, he visits the Heiner Brau brewery in Covington and talks with brewmeister Henryk Orlik. Back in the studio kitchen, he cooks Cabbage and Ground Beef Soup and continues talking with his guests. Throughout the show, Julie Council and the Jubilee German Band entertain the audience throughout the show.
