Description

In this episode from the “After the Hunt” series of “A Taste of Louisiana” from June 2, 2011, Chef John Folse visits the Eunice Superette, a slaughterhouse and butcher shop in Eunice, Louisiana. He meets with Andy Thibodaux, a butcher, and Chris Hughes, the owner of Broken Arrow Ranch in Texas, who discuss the regulations concerning the sale of wild game. In the studio kitchen, he cooks Sauerkraut with Roasted Wild Boar Chops as he talks with Hughes about Broken Arrow Ranch, one of the only commercial suppliers of wild game in the country. Next, Chef Folse visits Rio Mar Restaurant in New Orleans and prepares Chorizo Stuffed Loin of Wild Boar with Adolfo Garcia, the restaurant’s chef and owner. Back in the studio kitchen, he prepares Pulled Pork Sandwiches using Wild Boar Leg and talks about meat processing with Thibodaux. The Cajun band Choupique entertains the audience with live music throughout the show.
