Description

In this episode from the “After the Hunt” series of “A Taste of Louisiana” from May 26, 2011, Chef John Folse visits Bowie Outfitters in Baton Rouge, Louisiana, and meets with David Reynerson and Jim Brown, who discuss the history of hunting clothes and camouflage from the Middle Ages to the present day. In the studio kitchen, he prepares Pheasant & Wild Rice Soup and continues to discuss camouflage patterns with Reynerson and Brown. Next, Chef Folse visits Palo Alto Gun and Rod Club in Donaldsonville, Louisiana, and cooks Braised Pheasant and Red Cabbage with Yvette Gaudin and her daughters, Katie Gaudin and Clair Gaudin. Back in the studio kitchen, he prepares Pheasant Pasta as he discusses raising pheasants with Gaudin. He also talks to Arthur Craggs, the owner of Deep South Pottery, about the history of pottery. The band Smithfield Fair entertains the audience with live music throughout the show.
