Description

In this episode from the “After the Hunt” series of “A Taste of Louisiana” from February 10, 2011, Chef John Folse visits the Cochon de Lait Festival in Mansura, Louisiana. He meets with Ray Bordelon and Gerald Wayne Lemoine, who discuss the history of boar hunting throughout the world and how wild boar is eaten today. In the studio kitchen, he prepares Spice-Rubbed Wild Boar Tenderloin and discusses the Cajun Microwave with Al Simon, the owner of Cajun Microwaves. Next, Chef Folse travels to White Oak Plantation in Baton Rouge and prepares Wild Boar in a Cajun Microwave with Jeff Addison, a wild boar hunter. Back in the studio kitchen, he cooks Wild Boar Chops and talks about the differences between wild boar and domesticated pigs with Addison. The Cajun band Choupique entertains the audience with live music throughout the show.
