In this episode from the “After the Hunt” series of “A Taste of Louisiana” from January 20, 2011, Chef John Folse visits with Secretary Robert Barham of the Louisiana Department of Wildlife and Fisheries, who discusses coastal and wildlife conservation in Louisiana. In the studio kitchen, he cooks Turtle Sauce Patot. Next, Chef Folse visits Commander’s Palace in New Orleans and prepares their famous Turtle Soup with Executive Chef Tory McPhail. Back in the studio kitchen, he prepares Turtle Lafourche and continues to talk with Secretary Barham about the state of animal habitats after coastal land loss and the impact of Hurricane Katrina and Hurricane Rita. Bubba Frey and the Mowata House Band entertain the audience with live music throughout the show.
