Description
In this episode from the “Our Food Heritage” series of “A Taste of Louisiana” from August 5, 2006, Chef John Folse focuses on the Native American influence on Louisiana cuisine. He first visits with Dr. Charles M. Allen and Kim Hollier at the Louisiana State Arboretum in Ville Platte to learn more about the native plants of the Lower Mississippi Valley. In the kitchen, Chef Folse prepares Stuffed Peppers. Next, he visits with Dr. Alma Blanchard, and Jennifer Landry, her great-niece, at Blanchard’s home in Brusly St. Vincent to learn more about the work of traiteurs. Back in the studio kitchen, Chef Folse makes Persimmon Bread and continues talking with his guests. Throughout the show, Hazel Dardar entertains the audience with live music.
